Well - how are we all doing on this 23rd day of March? I'd be willing to bet that most of us aren't exactly doing what we thought we'd be doing as the end of March rolls around... I know I'm not, are you? If you'd have told me at the start of this month that by the fourth week of March I'd be packing up my office so I could work from home - I doubt I'd have believed you!
However - here we are. I spent a chunk of my work day today packing up supplies that I'd need at home to do work for the foreseeable future... granted; it's hard to know how long that will extend. I am doing my best in these uncertain times to trust in the Lord and know that the one who has control is still in control - it's sometimes easier said than done.
Friday was a pretty stressful day at work - I honestly feel like all of last week was pretty stressful and I am pretty certain that 90% of that was; for me, due to anxiety about Coronavirus. I was really glad to be at home once Friday rolled around and I was especially glad to just have some time to chill. We had carry-out from one of our favorite restaurants - Nana's Irish Pub - it was delicious! They have the best Chicken Pot Pie that I've ever eaten, no doubt about it.
Saturday morning I actually ended up sleeping in until almost 8:30 - something I haven't done in a while. Well... scratch that, I did sleep until almost 9:00 last Sunday. Oops! After coffee, breakfast and exercise, my parents (who have been working from home already... or are just at home because: retired) decided we had to get out and do something - even just a drive around the countryside. And that's exactly what we did.
It was 75 on Friday but when Saturday rolled around, the temperature hovered around the mid-40's. We'd planned to picnic at the Arboretum but we ended up scarfing our sandwiches while wrapped in a blanket and then running back to the car to have our chips and cookies - brrrr! Watson even climbed up on the bench with me to snuggle - although part of his motivation was that he be nearer to the food!
We did see some really lovely sights as we cruised around the county and best of all - no people to interact with, so we were obeying the social distancing! Once we came home, the sun had finally come out and so I took Watson on a walk around the neighborhood to snap some pictures of blooms that were starting to pop up!
I whipped up some black bean soup (I'll have to share the recipe soon) for dinner on Saturday night and then had something of a Pintrest fail... *sigh* I found a recipe for peanut butter cookies with just 36 calories a cookie, made from honey, peanut butter, baking soda and an egg... I think I figured out my problem - a too small sheet. I think if I make them again and use a larger cookie sheet, they'd turn out great because the flavor was phenomenal - they were just a little too soft and never quite set. I'll definitely try them again!
I'll dedicate a whole post to Sunday because - probably against better judgement - we drove into DC to see the Cherry Blossoms and I took a ton of pictures. We'd considered doing this and I talked with a friend in DC and she said it wasn't too crowded. After viewing the cameras on the Tidal Basin, we decided it was doable and we went... It wasn't crowded and people were good about maintaining distance - so hopefully it wasn't a choice I'll come to regret.
I'll share those gorgeous pictures in another post this week! I packed up the office today, so I'll be working from home for the first time - ever - this week. The coming weeks will certainly be interesting, but then again - life is pretty interesting, regardless of whether or not there is a pandemic.
