Camping(ish)

I know the title is enjoyable - it was inspired by a friend who asked me on the phone this morning if I enjoyed my experience "camping... ish" this weekend. Cue me cracking up! I think I've made it known that I'm not really big on camping but I did get to take advantage of some of the perks of camping (hello s'mores) without sleeping on the ground. That's a win! 

Friday I got off work early (cheers!) and ended up spending most of Friday afternoon and evening being a huge bum - it was great! I painted my fingernails and toenails, sat out on the deck to read, watched a movie called Palm Springs, got interested in the show The Politician on Netflix and was generally just very lazy. It was such a delight and I haven't done that in a while.

 

Saturday morning I got myself up and put together a bit earlier than usual and attended the memorial service for a sweet friend's mother - the service was lovely and so very touching! Afterward, I made my way home, changed clothes and picked up my pup and headed up into the mountains! 




I joined my parents at their campsite at Big Meadows in the Shenandoah National Park and we made our way to the Upper Hawksbill Trail that is a 2 mile out and back trail to the highest point in the Shenandoah National Park at 4,050 feet of elevation! The trail is noted as moderate and while I'd 100% classify the first 0.7 of the mile in as moderate, the final 0.3 are pretty much a straight uphill hike - so make note of that if you plan to give this one a go! 


 


The weather was a mixed bag on Saturday with clouds rolling over the mountain peaks all day long. When Watson and I arrived at the summit, the whole area was wreathed in misty clouds and there wasn't much of a view... but we waited... and it was worth it! The clouds rolled on and soon the view to the valley cleared and the views were spectacular! Watson very much enjoyed the hike and I think he'd have cruised right to the edge of each rocky outcropping to peer over if I'd have let him!


 


 

  

The way back down the trail was much easier because it was pretty much a downhill roll, ha-ha! About halfway down the trail a Spike (a little male deer) stepped onto the trail and gradually made his way across the trail and into the forest again. I think he'd have hung around a bit longer but there were other people coming up the trail and they were quite noisy! *sigh* 


 


We popped over to the Big Meadows Lodge and my Dad and I made our way up a 0.1 of a mile "trail" to the Black Rock Overlook - talk about maximum views for minimal effort - it was stunning! Happily the clouds weren't too heavy when we reached the summit and I was able to take some great pictures. I certainly love living in the mountains - the views cannot be beat!


 

 



We made our way back to my parent's campsite, stopping along the way to snap a picture of two wee little fawn grazing along the edge of the road! Watson is; much like me, not a huge fan of camping and so while the fire was being built up for dinner, all that Watson really wanted to do was sit on the ground and shiver! He also wasn't a fan of the fire and did his best to avoid getting anywhere near it - unless there was a hot dog or marshmallow being roasted!  


 

 


Hands down the best part of camping (ish) is the food you get to make when you camp! We had hamburgers cooked over charcoal and I do think it was one of the best hamburgers I've had in a long time! We also roasted hot dogs and of course, there were s'mores! *sigh* We even mixed it up with the s'mores and instead of a bit of Hershey's chocolate, we inserted a Reese's Thin - and y'all, that was absolutely delicious! 

 


Around 7:30 Watson and I hopped back in the car and headed down the mountains to a shower and a warm bed. The drive home was filled with fog so thick I couldn't see but a couple feet past the front of my car and then... when the fog lifted, all the rain! It was all worth it though because the hikes were great, the food was divine and the company was first class! I was glad to get home, take a shower and climb into my bed, ha-ha!



Sunday morning I caught church online and sipped my coffee while I was watching the service online. I got myself all 60's - styled and heading to Regions 117 for brunch to celebrate my dear friend Cindy's graduation! The food was great as always and the company was all kinds of fun! It was a great way to spend a couple hours on Sunday!

I passed the rest of the afternoon with a phone call to my sister, watering some new plants in the backyard, reading, totally chowing down on some pizza (the first I've had in months...) and taking a bubble bath. It was a good weekend!

Five on Friday

It's Friday - finally and what a joy! I joked with a friend this morning that this week hasn't seemed long and it hasn't really been hard but I'm still just very glad to see Friday arrive! Cheers to the weekend! 


One. Lemon Squash Bread - A friend from the office brought in huge squash from her garden and I took two home with no clue what exactly I'd do with them... I scoured Pinterest and ended up finding a recipe for Lemon Squash Bread (think of Zucchini Bread) and I decided I'd give it a whirl! I made it last Saturday and it was a big hit - so I thought I'd share that recipe here with you!

For the Bread
  • 1 1/3 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 tablespoons lemon juice
  • zest from one lemon
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup yellow squash; grated
For the Lemon Glaze
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon milk

  • Spray well a 9/x3 bread pan & preheat the oven to 350 degrees.
  • In a large mixing bowl using a hand mixer, beat the eggs. Add the 1/2 cup of oil and the 1 1/3 cups sugar and mix until well blended.
  • Add 1/2 cup buttermilk, 2 tablespoons of lemon juice and lemon zest to the mixture and blend well.
  • Add the 2 cups of flour, 1/2 teaspoon of salt and 2 teaspoons of baking powder all at once. Blend on low spend just until everything is incorporated and most of the lumps are gone.
  • Add the one cup of grated yellow squash and fold in using a spoon.
  • Pour the batter into your prepared bread pan and bake for 40-45 minutes, until the top is golden brown.
  • All the bread to cool for at least 30 minutes in the pans. Then slide a knife or spatula around the edges to loose and turn out on a cutting board. Allow to cool completely. 
  • Mix together 1 cup powdered sugar, 1 tablespoon lemon juice and 1 tablespoon milk until well incorporated and drizzle glaze over cooled bread!

Two. A Little Something Red - I have wanted a new purse for the last month but I've gone back and forth, back and forth because I knew I didn't "need" a new purse... you know, it's always about weighing the wants and the needs. *sigh* However...

I received an email from Kate Spade last week and the Wellesley Small Camryn purse was part of a flash sale - while it normally sells for $329 (cue my eyes bugging out of my head) it was on sale for that day only at $79! Y'all - I couldn't resist that absolute steal and it arrived earlier this week and it just the best!

Three. Weekend Plans - I actually have a pretty full weekend and I think that's the first time I've said that in months! Hazard of the Year of COVID, am I right? I'm going to enjoy my Friday night tonight with a movie and just enjoying chilling out because I have plans the rest of the weekend! I'm attending a Memorial service for a friend's sweet Momma on Saturday morning and then I'll be changing my clothes, grabbing my pup and heading into the mountains where my parents are camping...

Hawksbill Summit Loop | Virginia Trail Guide

I am not much of a camper - but I am going to hang out at their campsite for a bit on Saturday afternoon and evening! We are going to hike Upper Hawksbill Trail, which is the highest point in the Shenandoah National Park and hopefully I'll get a picture like the one above! I'm going to enjoy some campfire food and then head home to my bed, ha-ha! Sunday I'm having brunch with a bunch of friends to celebrate a graduation and let me tell you - I feel like I'll blink and the weekend will be over!

Four. Perfect Weather - Oh man, the weather lately (as in - this past week) has been divine! The temperatures have hovered in the upper 70's and lower 80's and it's just been the best. I've spent a lot of time on the deck reading and you can bet I'll be doing some of that this weekend too!


Five. Turkey Chili - That's right, it's another recipe! I have been on Weight Watchers since the beginning of the year and as of today I've lost 42 pounds - so it definitely works! One of the recipes I have fallen in love with is the Turkey Chili and since Autumn is just around the corner, I thought I'd share that with you!

Easy Turkey Chili - Cooking Made Healthy

Turkey Chili
  • 1 tablespoon vegetable oil
  • 6 medium sweet red peppers; diced
  • 2 uncooked red onions; diced
  • 2 pounds 99% fat-free ground turkey breast
  • 2 tablespoons chili powder
  • 4 pinches table salt
  • 3 pinches cumin
  • 45 ounces fire roasted diced tomatoes
  • 15 ounces black beans; rinsed & drained
  • 15 ounces pinto beans; rinsed & drained
  • 15 ounce canned refried beans
  • 1/2 cup water
To Make
  • In a large pot, heat oil over medium heat. Add red peppers and onion, cook and stir frequently, until onions are translucent - about 10-15 minutes.
  • Add turkey, chili powder, salt and cumin. Cook stirring and breaking apart turkey as it cooks until meat is just browned, 2-3 minutes.
  • Stir in remaining ingredients and bring to a boil over high heat. Reduce heat to medium-low; simmer, stirring occasionally until chili is sufficiently thickened - about 45 minutes. 
This is a great recipe and if I could make just one adjustment it might be to add a chili seasoning packet to give it just a little more flavor. It tastes delicious but doesn't quite have that "kick" or heat that you usually associate with a chili!

Chasing Waterfalls

It's quite a sunshine-filled day here today which is a welcome relief after the dreary rainy weekend that just passed - and while it didn't rain all weekend - it rained for most of it.

Friday after work I popped into the nearby library's book sale and picked up two hardback books for the low low price of $4 and so I've added those to the stack of books I have to read! I perused Hobby Lobby and found some awesome sale items, had dinner at Olive Garden with my parents and even got in some time on the elliptical before curling up on my couch to watch JoJo Rabbit. I've been wanting to see it for a while and it popped up on HBO.

Saturday was just a rainy day all around and I didn't sleep nearly as late as I'd hoped I would... *sigh* but after coffee and quality time with the elliptical, it was out into the rain to run some errands. I discovered that a large Cherry Limeade at Sonic is only 1 WW point - so I was happy to have that with my lunch while running errands.

I passed the afternoon with a little reading, baking some Lemon Squash Bread and helping my Dad move a tree in the backyard. I also make some delicious Turkey Chili for dinner - perfect for a rainy evening and watched some more of the utter delight that is Phil Rosenthal on Somebody Feed Phil. I am anxiously awaiting the fourth season!

Sunday started overcast but by the time I'd been to church, had lunch and popped into Target for a bit, the skies were clearing up and with no rain in the forecast my parents and I headed into the Shenandoah National Park and made our way along the parkway to the Dark Hollow Falls Trail.

I've been wanting to go hiking (again) for the past few weekends and I was so glad that we finally had the chance. It seems like this whole pandemic/quarantine scenario has just made me more restless than usual and I tend to always want to get outside. While it did take about an hour and fifteen minutes to get to the trail head - the hike was so worth it and I'm just so glad we were able to go do it!

The trail isn't too long at all - just 1.4 miles round trip and going in is quite easy since it's downhill all the way! The stream flows alongside the trail all the way down and the landscape is just so beautiful; I think this might be my new favorite hike! After climbing down the trail and listening to the roar of the water get louder and louder... finally, the falls emerge to your right and what a sight they are!

Dark Hollow Falls is seventy feet high with a small pool at the base where the water collects before continuing further down and dropping again just a little farther on - my Dad and I continued down the way a bit to see some of the other falls and I noted the trail kept going. It would be interesting to see where the rest of the trail led but we started a little later than usual, so we headed back and arrived back to the car shortly after 5:00.

Since I'd never been to Big Meadows Lodge and it was already after 5:00, we decided to pop over there for a quick dinner before driving back down the mountain. I had Peanut Soup and it was absolutely to die for - so very good! The only place I've ever seen Peanut Soup was in Colonial Williamsburg and so I jumped at the chance to try another variation and this one did not disappoint! It was savory and delicious without being too rich, with bits of peanut sprinkled in for good measure!

The views from the dining room at Big Meadows Lodge were pretty spectacular and my Mom and I finished the meal with a scoop of Blackberry Ice Cream before we made the drive back down the mountain. Once we were home I showered and got ready for the work week ahead - another good weekend in the books for 2020!

Five on Friday



One. Floss Your Teeth - This my PSA for you to go to the dentist! You know the perfect way to start a week? Go have a root canal done; it's superb! Nothing really kicks off a Monday morning like almost having a panic attack about your impending root canal and then having said root canal done...


I jest. Sort of. I did have a root canal on Monday morning and I did feel like I was going to freak out a little bit - but then I didn't. And the root canal wasn't so bad, so I scheduled another one for this Tuesday! Seriously though - don't skip the dentist and start flossing. That's your advice for the day.

Two. Cookie Therapy - If you live in the Northern Virginia area and need some seriously spectacular cookies, I cannot recommend Cookie Therapy enough! A friend in the neighborhood introduced me to her cookies and they are the most beautifully made cookies and they also taste delicious!

Three. Curse the Covid - I know we are all thinking that.. it's not a new thought or anything but my younger sister posted this meme below on Instagram earlier this week and while we'd all like a vacation, she was referencing how long it's been since we've all seen each other. 


My younger sister actually lives in another country at present and so with all the travel restrictions in place, I haven't seen my sister since December of last year! She's seen my parents a bit at the start of the year but that's about it. We all had plans to see her before now but then COVID arrived with it's life ruining ways...
