I happened upon this on my Facebook page and realized I had posted this in October of 2009. I decided to update it in the form of a blog post and see if any of my answers changed in the past five years. Obviously, some of these answers won't change but I know some of them have. It's a long post, but I thought it was fun. :) Maybe I'll do it again in five years.
1. ONE OF YOUR SCARS, HOW DID YOU GET IT?
-I have a scar on my front of my right leg from my kid years; I ran, tripped & slid straight into the corner of a counter & split my shin open. Now, it didn't require stitches but it was pretty gruesome looking for a while. This scar is so funny to me now because when I was a kid, it lined up directly in front of the bone in my leg (because I about split it open to there) but as I've grown, the scar has moved & now it doesn't line up with anything anymore. Ha-ha.

-None of the above; although I've been told by a couple people that I breathe very heavily when I am good & asleep.
4. WHAT TYPE OF MUSIC DO YOU LISTEN TO?
-I love music in general; right now I'm addicted to my Game of Thrones soundtracks (season 1 & 2) & when I'm not listening to that, I'm usually listening to Hunter Hayes. Beyond that, I don't listen to the radio very much. I find music that I like most often on the TV shows that I watch or as recommendations from friends. I also really like classical music, hence the love of the Game of Thrones soundtrack.
5. WHAT TIME WERE YOU BORN?
-I believe in the morning but I'd need confirmation from my Mom on that one.
6. WHAT DO YOU WANT MORE THAN ANYTHING RIGHT NOW?

Single Girl Suppers - Tater Salad!
Here we are again on Wednesday and I've got another supper to share with y'all. Granted, this wasn't my entire supper but it went with my supper and it is awfully good.
Back at Christmastime, we had a church staff Christmas party and someone made Loaded Baked Potato Salad. I'm not a big fan of potato salad, especially not mustard potato salad. This however, this was absolutely delicious - I ate two helpings and was so tempted to go back for a third, but since I was in the company of others I decided not to act like a pig. Ha-ha! Ever since that night, I have thought about that potato salad and been on the hunt for a recipe. I may still tweak this one, but I think it is pretty darn close to what I was looking for and it's awfully delicious with a nice sandwich on a night when I'd actually rather not cook!
Loaded Baked Potato Salad
-4/5 small red potatoes, washed & cut to desired shape
-2 cups sour cream
-onion (chopped or flakes; I used flakes because it is all I had)
-1 packet Ranch dressing mix
-bacon; cooked & crumbled
-shredded cheddar cheese
-2 tbsp. milk
-Wash, cut and boil your potatoes; about 15 minutes or until soft. Refrigerate.
-In a small bowl mix together sour cream, onion and Ranch dressing packet thoroughly. Put in the fridge & allow the flavors to "mix" about 2 hours.
-Cook and shred your bacon.
-After the 2 hours have passed, add 2 tbsp. of milk to the sauce and whisk.
-Mix together sauce, potatoes, bacon and cheese.
-Enjoy!
Like I said, I might tweak this recipe a little bit...we'll see what happens the next time I make this, but for my first outing with potato salad, I think it was pretty darn tasty!

It May Already Be...May...
Oh good grief - it is Monday again. Where is time going?? I feel like this year is just whipping by at a dizzying fast pace. Wasn't it just January? These past few months have definitely brought to mind a quote I read somewhere about not being certain whether life is trying to pass me by or run me over. Granted, I'm looking forward to seeing my little sister in just 8 days, so I don't mind if the next 8 days pass too quickly; as long as the 5 days after that pass slowly. I'm sure they won't.
As I've mentioned, I love getting mail. My wonderful parents send me mail pretty frequently, often when I check the mail at the end of the day I'll find a nice little card from my Mom. Some days those simple words of love & encouragement are just what I need. Happily, my parents also send me boxes. You see, since Lindsey went to school almost a thousand miles away, my Mom started sending her goodie boxes just because she loves her. I remember whining (yep, shocker...I can whine when I want to) about how I'd never gotten boxes when I was away at USM and my Mom explained that I went to school only 90 minutes away and so when I wanted or needed something I just came home to get it. Well - then my parents moved hundreds of miles away and suddenly I am reaping the benefits of getting boxes in the mail. I guess that is one of the positives of living far away from your parents. Granted, it is a very small positive but you've got to take what you can get, right?
When we lived in our house, my parents were always outside gardening, planting and keeping the yard landscaped. We had flowers, bushes, little trees and even blueberry bushes - fast forward to the Spring of 2011 when my parents moved and sold the house. The couple that bought our house aren't really into planting and gardening, so they removed all the plants from the yard; except for the red Amaryllis that were growing on the side of the house. When they started to bloom last April, I remembered that the new neighbors had uprooted all the other plants and I immediately seized on the moment and ran next door to ask if I could please have the flowers as opposed to them just being uprooted and trashed. I was told yes and so when my Dad came to visit the next weekend, as part of the yard work we did, I took my bucket and trowel, carefully scooped out the flowers; bulbs and all and carried them back across the yard to be planted.
My Dad and my Uncle were quite convinced that they wouldn't grow in the soil that I planted them in - but no matter; I planted them, watered them and just prayed that when Spring came again there would be blooms. I should mention, these are hard fought for flowers; the day that I planted them was the same day that I got bit by a tick and managed to get Lyme disease. So yeah, I was really hoping that the flowers would bloom. About a month ago, I began to notice that it was looking like my hopes of my flowers blooming would be a reality. I watched them carefully as the weeks passed and to my extreme joy - they bloomed! Granted, I planted about 6 of them and so far only one has bloomed but I still consider that a victory. So, green thumb? Maybe not completely. Mint green thumb? I've got that!
Rain - oh my geez. I woke up on Wednesday morning and I could hear the rain just pouring on the roof. It proceeded to rain until Friday night. Yes, it was on and off at times, but it was a wet rest of the week here in MS and by Friday, after I'd dragged myself into the house in a torrential downpour and had to strip off my sodden clothes on the doormat; (the joys of living in the country; no neighbors to see when you strip to your underwear right inside the door, ha-ha!) suffice it so say, I was ready for the rain to end.
So - this should be stated; I'm a huge nerd. I think we've discussed this. I love books so very much. I know tablets are the way things are going right now and that's all well and good, but I need my books. There is just something about the way a book smells; the ink of the pages, the sound that pages make when you turn them, the way the pages feel between your fingers. I think libraries and book stores have one of the best smells ever. Again - I'm a nerd. And I'm totally okay with that.
Sunday was wonderful because we only had one service and so that I meant I got to sleep in later than usual. When I woke up at 8:15 and still didn't have to get out of the bed; it was so great that I wasn't sure what to do with myself. We also had a precious new baby at church and I love getting to snuggle new little babies at church. I do love my job as the nursery coordinator; if for no other reason than that I love sweet little children and love spending time with them.

What I'm Into in May!
Thought I'd change things up a little and write a bit about some of the things that I'm getting into in the month of May...just because I thought I'd share a little bit with you.
Books I Read:
A Feast for Crows by George R.R. Martin: This is the 4th book in the A Song of Ice & Fire series that Game of Thrones is based on. I've already read it once, but these books twist & turn so much that it's worth reading more than once just so you're not completely lost.
A Dance of Dragons by George R.R. Martin: Yep, another one of these. This is the 5th book in the series & I'm reading it for the same reason I'm reading the one above; because it's well worth a second read. The series & each book encompasses so much information, with so many twists & turns, you want to be sure you get it all in. It's only 1016 pages. Ha-ha!
Books in the Queue:
Dead Ever After by Charlaine Harris: This is the final book in the Sookie Stackhouse series. I've got the other 12 (of course the last one is number 13!) and I'd like to see how this all ends up. It comes out next week & I've got my own ideas & hopes for how it all ends. Now if only True Blood (the show based on these books) was still as good as the books. Oh well...
Argo: How the CIA & Hollywood Pulled off the Most Audacious Rescue in History by Antonio Mendez: I absolutely loved the movie Argo, so I bought the book with the intention of reading it. I've gotten kind of sidetracked but I plan to try to get it read sometime in the month of May...or at least early June.
Heaven is for Real by Todd Burpo: I bought this book on my tablet earlier this year because it was on sale for about $3.00 - you can't beat a deal like that & I've heard numerous people talk about how incredible this book was. Again, this is another book that I'll try to get to sometime this month.
Can't Miss Television:
Game of Thrones: If that answer wasn't obvious, then you don't read my blog very often. The 3rd season is already halfway over (*sob*) but it just keeps getting better with every episode. Granted, since I've read the books I knew it was just going to keep getting better. I can't wait to see what unfolds in the back half of the season & how they interpret some of the best parts of the 3rd book. So far, it has been excellent.
Elementary: I got into this show as a fluke last Fall because I love Robert Downey Jr.'s portrayal of Sherlock Holmes & so that got me even more intrigued, so when I heard they were doing a TV show with yet another re-imagining...I decided to get into it. I thought this premise of this show was interesting. Granted, there are only 2 episodes left before it ends for the summer but with Moriarty popping up at the end of last night's episode & Irene Adler (finally) appearing in the season finale in 2 weeks, this show is really starting to get good! Can't wait for season 2!
*It should be noted that I watch WAY too much TV & this list would be much longer, but seriously...all this season's shows are wrapping up with their finales & summer is starting. Summer is when I watch movies & ponder the fates of all the characters on my shows. Will they get back together? Is he/she really dead? Ha-ha.
Movies I've Watched:
We Bought A Zoo: I watched this movie at the recommendation of my Mom and a girl that I work with & it was really great. Such a heart-warming story, Matt Damon is easy on the eyes & the kids are cute. Plus, it was hilarious to watch Watson react to all the animal noises on the screen.
*so far, this is all I've watched recently...which is odd since I also watch movies all the time. Now if we were talking about movies I'm looking forward to watching: Iron Man 3, The Great Gatsby, Star Trek Into Darkness, Man of Steel...those all come to the forefront of my mind at the moment although I'm sure there are plenty more. It's summer after all, the season of the blockbuster!
Music I've Listened to:
Game of Thrones: Music from the Series: Yep, as you can see, right now Game of Thrones is ruling a large portion of my life - no pun intended, ha-ha. This is just an instrumental score but a lot of it is really beautiful & also quite calming (which is surprising since the show is rarely calming). I really like how instrumental music can capture the personalities of certain characters so well. I love listening to it on the way home in the afternoons.
Hunter Hayes: When I'm not listening to my Game of Thrones soundtrack, I'm most likely listening to Hunter Hayes. This is so random for me because he's a country music singer & I am NOT a fan of country music. I listen to a song every once in a while but I actually downloaded his whole album & I like every song but one. Not too shabby for a country singer, ha-ha!
Happiness is:
Sleeping late on Saturdays - easily my favorite day of the week. Right now I have the luxury of being able to sleep late on Saturdays & then plan my day from there on out. Which I love. And I know I should cherish this now because one day it won't be that way.
That feeling you have at 4:59 on a Friday, when you know the whole weekend spreads out in front of you, waiting to be explored.
Getting mail. I love getting mail from people - so if you ever want to send me a little hello via snail mail, feel free. I'll be thrilled to get it!
What I'm Looking Forward to in May:
Number one - obviously is my little sister coming to visit in just 11 short days! I'm not sure what we are going to get up to, but when Lindsey & I get together we always manage to have a good time!
As I stated above, it's blockbuster season & I can't wait to go see all these summer movies. Even if I have to go see a majority of them on my own. There are just too many movies & they have to be seen before they've come & gone.
Days off in May - I'm off on Friday the 17th to spend some time with Lindsey while she visits & I'm off again on May 27th for Memorial Day. Those are going to be two good days for sure!
Happy Friday Everyone! :)

Single Girl Suppers
So - if you're reading this blog, you already should know that I'm single. I'm not happily single, but as far as things go, I guess I can't complain. Along with being single, I also really like to cook. Someone in my office asked me a while back "you actually cook real food even though it's just you??" Which, really kind of blew my mind. I guess if you don't like to cook then maybe that makes sense, but I don't think just because a person is single they have to sit at home eating Stouffers for One microwave meals or turkey sandwiches. Am I right?
I love to cook though - I love finding or receiving new recipes, I love hunting the aisles of the grocery store finding ingredients, I love setting everything out on the counter and knowing that it will all come together to make something delicious. Most of the time at least; there have been a couple recipes that weren't so great.
On Monday night I made Sour Cream Chile Chicken Enchilada, which were great. I'm pretty sure I've posted the recipe on here before. Wednesday night, I didn't actually feel like cooking something that took too much time, so I started thinking about my leftovers. I had leftover Sour Cream Chile sauce and leftover black beans but no tortillas. I remembered that I had some tortilla chips and I decided I'd just craft my own new recipe. I made myself some Sour Cream Chile Chicken and Black Bean Nachos. And they were good y'all. Real good. Recipe after pictures!
Sour Cream Chile Chicken & Black Bean Nachos
-1 can white meat chicken; drained
-a pinch of black pepper
-a pinch of cumin
-leftover Sour Cream Chile sauce
-leftover black beans
-shredded Mexican cheese
-tortilla chips
-Open & drain chicken, cook in a skillet until warm, mixing in pepper & cumin
-Add in leftover Sour Cream Chile sauce & black beans, cooking it all together until hot.
-Load mixture onto tortilla chips & top with shredded cheese.
-Dig in!
And yes, I realize that maybe you don't have leftover Sour Cream Chile sauce sitting around your kitchen. So...
Sour Cream Chile Sauce
-3 tbsp. flour
-3 tbsp. butter
-2 cups chicken broth
-1 cup sour cream
-1 4 oz. can of chiles
-Mix butter & flour together for about a minute, until well incorporated.
-Add in 2 cups of chicken broth & 1 cup sour cream, mixing well. Do not boil this as you don't want your sour cream to curdle.
-Add in chiles & mix well.
This can be used over chicken enchiladas or to put with chicken and black beans for these nachos. It is also really just a delicious sauce and it freezes really well too and is good on all kinds of Mexican dishes.
So - there you go. My single girl supper for this week. I've got all kinds of other recipes to cook up, so maybe I'll start sharing some more of those. Because I'm just a firm believer that just because I'm single, it doesn't mean I can't eat well.
